Gluten-free Grain, Peach & Lentil Salad

Refreshing late summer salad. Makes a great side dish or even main course. It is filling and satisfying and provides a good amount of protein.



Serves 1 – 2
1/2 cup quinoa or sorghum
1 Peach (pit removed, chopped)
1 cup Lentils (cooked)
1/2 cup Parsley (finely chopped)
2 tbsps Apple Cider Vinegar
1 tsp Cinnamon
1/2 tsp Sea Salt

Cook the grains according to the instructions on the package. Let cool, fluff with fork.
Mix peach, lentils, parsley, apple cider vinegar, cinnamon and salt together. Mix with the grain.

Tip: if you like more “sauce” with the salad, add 1 tsp pumpkin seed oil.
